The Host
Maximo grew up in Buenos Aires with a deep understanding of sobremesa — that untranslatable hour after the meal ends, when no one moves, the wine is still flowing, and the real night begins. He learned early that the food is just the opening act. The moment lives in the people around the table and the atmosphere they create together. That's where his obsession with dinner parties was born.
A graduate of Cornell's School of Hotel Administration, he went on to spend time at École Ducasse in Paris before finding his way to the kitchen of a two Michelin-starred restaurant in Tuscany — learning the craft from the inside out.
What truly drives Maximo is the memory of dining as a child at places like Villa d'Este and Cala di Volpe — hotels that didn't just serve meals, they created moments that stayed with you for life. His dinner parties are an attempt to bring that same magic home: the warmth, the unhurried elegance, the sense that the evening was made just for you.
